A Survey of Commercial Practices in Sensory Examination of Wines

The conditions existing and the methods used by California wineries and other wineries in the United States and Canada were surveyed. Some criticisms are made of conditions or methods encountered, and improvements are suggested and explained. The survey did not cover all facets of tasting, and the 10 percent reply from non-California wineries would not necessarily represent that group.
