Varietal Table Wine Processing Practices in California. I. Varieties, Grape and Juice Handling and Fermentation

A survey of table-wine-processing practices in eight varietal table-wine wineries was initiated in the spring of 1967. The first phase of the survey, covering grape processing through fermentation, has been completed. The similarities and differences between wineries in the various operations are presented.
