Dimethyldicarbonate as a Wine Sterilant

An effective new wine sterilant, dimethyldicarbonatea (DMDC) proved extremely effective in sterilizing white wines against yeast, and somewhat less effective with red wines. The levels of yeast cells present and the wine pH can be used to explain differences in effectiveness. The material imparts no off-flavor or off-aroma detectable by judges at the amounts added (200 mg/l).
